I had my first bottle of Etsukigaijin the other day and it was delicious, but this is Etsukigaijin, brewed in 2015, so it's an old sake that's been aged about five years.
It already has the ecstatic sweetness and sourness of old sake in the aroma. There's no doubt about it. It definitely has that old sake feel to it, but it's beautiful.
When you put it in your mouth, the sourness, sweetness, and umami are woohoo! It's so delicious! One step later, a nice bitterness comes out as well. Oooooh!

As I drank it slowly, it came close to room temperature, and that opened up the sweetness again, yum!
After that, heating it up is also great!
It was a happy sake, with the unique umami and bitterness of old sake mixed with the gentle sweetness and sourness.
If I were to compare it to Ghibli, I'd say it's like Bertha from "The Witch's Delivery Service. She is a helper of an old lady who bakes a herring pie. She is old, but her playful spirit is still active. She is a person who can enjoy her days. I want to be an old man like her!

I like sweet and easy to drink, so this is a dry sake with a crisp taste.
It is not Etsu, but Honor no Kaijin.
We are drinking it with tempura of albacore and fried moray eel, so it is a good marriage.
