We will have Junmai Ginjo from the brewery of an acquaintance. I left it in the fridge for a while, but after opening the bottle, it had a light gas and a fruity taste! It has a solid taste of amino acid rather than sweetness or acidity. Rice polishing ratio: 59% (Hitogochi rice from Saku, Nagano Prefecture) Brewing water: Yakedake mountain range subsoil water You can drink this brewing water in front of the brewery, and it is very clear and delicious water of Saku. This brewery's amazake has been featured on TV and can be bought in Tokyo, but it's hard to buy sake in Tokyo, so if I ever get to Nagano again, I'd like to buy some!
