上立香の少しこわばった印象は、口に含むと硬めの酸味なんだと気づく。
口に含むと、さっきまでこわばっていた酸味が優しく柔らかくなっていく。その酸味の流れにお米の甘みがあくまでも控えめに乗ってくる。その後に来る静かなキレ感。
口に含んでからの、この微かな味わいの変遷が特徴のお酒。
前面に主張なんてしなくても、お米の美味しさをシンプルにきちんと伝えられるんだと教えられる。
