It is made by the traditional yeast. I didn't see anything about it on the label, but I got the impression that it was a special junmai, with a strong, typical sake flavor. It looks like it would be good served hot.
The design of this sake says, "It's made with a natural yeast.
I had this one warmed up, and it was so well balanced that I had another.
The flavor, acidity, and aroma are strong, but not tiring. For me, it was right in the middle.
If it were sold in my neighborhood, I'd definitely buy it! This.
