slowly but surely The nose is sweet and bitter with caramel notes mainly from alcohol. In the mouth, it has a slight caramel and honey sweetness with a hint of aging. From there, the sweetness and bitterness spreads slowly. A little bit of acidity at the beginning. Delicious. This sake is a local brand from Kikumori Shuzo, which is famous for Taxi Driver. The Taxi Driver was a very sweet and rich sake, but this one is also very delicious. The difference is that while the Taxi Driver had a strong impact, this one is slowly delicious. If I were to use a Ghibli analogy, I'd say Mr. Shiro Nishi from "Earshot". He is Seishi's grandfather. He is the owner of Chikyudo. Age-old deliciousness and bitterness with plenty of sweetness to enjoy life. The demon sword dance is like Zoro from One Piece, if only in name. But the flavor impression is milder. Apparently, the demon sword dance is a traditional dance of Kitakami City in Iwate Prefecture, the brewery's home town. I saw a video of them dancing with a mask that looks like a demon.
