It is one of the smallest small breweries in the country. According to the social networking site of the brewery, it is a medium-brewed sake. It has a fresh mouthfeel and a pineapple-like sweetness. The aftertaste is short but bitter at the end. I think it could be a good one depending on how it is sold 🤔. The taste is reminiscent of Hanahayo. Smokiness comes out as the temperature rises.

Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

Purchased at a liquor store specializing in Hyogo sake This sake was commercialized through crowdfunding and brewed by an 83-year-old and a 78-year-old toji with koji made by a young brewer. The rice is Hyogo-kitanishiki and Gohyakumangoku. It has a low alcohol content and a gentle taste. It has a peachy aroma and flavor. It also has a lychee-like atmosphere. It is refreshing and tasty. Buntaro is a young brewery, but the toji is a veteran, and I didn't think they produced this type of sake😅.

A new brand newly launched by a brewery that used to sell almost exclusively in vats. The name "Kamike" is pronounced "mike. I have bought sake from this brewery in the past and wondered how it was able to survive when it was almost completely undistributed. Until recently, the brewery was mass-producing sake for packaged sake for major companies, but after the Corona disaster, they no longer received orders and could no longer hire a toji. The only way to get it was to buy it directly from the brewery or at roadside stations around the brewery, but a liquor store in Nishinomiya that specializes in Hyogo sake has started to carry it, so we will keep an eye on it. The production volume of this brand alone is less than half that of a certain brewery that calls itself the smallest in Japan, with a production of about 20 koku. They are not aiming to be a small brewery, so they may increase their production in the future. The bottle was heated once and the stopper jumped when I opened it because there was still gas in the bottle😅. The rice is Hyogo Kitanishiki. The Junmai and Junmai Daiginjo were Hyogo Sake85. It has a gaseous feeling, melon-like sweetness and bitterness, and the acidity extends with the bitterness. It tastes like the latest fad. The aftertaste is citrusy and lingers. I think it tastes sweeter when the temperature is raised. I think the bitterness is strong. I feel like there is a similar sake, but I can't remember it...

The brewery is located in Kusatsu, Shiga Prefecture, but they also have a brewery in Nada, and this sake was brewed at the Chiyoda Brewery in Nada. The Shiga brewery's brand name is Doukan, but some of the sake made in Nada also call themselves Doukan, so it's a bit complicated... The rice is Fukunohana from Hyogo Prefecture. A Chiyoda brewer who visited my neighborhood liquor store once told me that only Chiyoda brewery and Fukumitsuya (Kagatobi) in Ishikawa always use Fukunohana. It was light nigori, but it was cloudy, gassy, and shuffling more than the Hamachidori I saw earlier. It's a refreshing sweet and sour sake. But there was something off-flavorful and uncomfortable about it. It smells unpleasant, like disinfectant. If it were not for that, it would be a very tasty sake.

Hi Ponchan 😃 In Hyogo, I have more chances to meet Chiyoda brewery's sake than Shiga's Doukan 😊. I've never compared the taste but I heard it's a completely different type of taste too 😁 the smell 😭.

I drank it in the past, but since the label is new, I tried it. It is a limited edition of 13 shops in Nishinomiya City. When it is first opened, it has a light gassy and sweet taste. In the latter half, the pungent taste comes and converges. Basically, it is dry. If it is the same as before, I think the taste will change greatly after a few days.

Miyamizu no Sato is a brand limited to 13 shops in Nishinomiya City. You can't buy it even at Shirataka's shop. I had a chance to try one of the rare sake barrels. It is made of 100% Yamada Nishiki from the special A district, and the price is reasonable at about 1,300 yen. The aroma of the barrel is good. I thought I didn't like barrel sake and avoided it, but it is delicious.

This is a 10 year old 60% polished undiluted sake. I've had the aged sake here before, so I just tasted it. Because it was stored in the warehouse, it has a beautiful aged feeling. For an old sake, it is refreshing and easy to drink.
