A very low-polishing sake with 91% polished rice.
The "S" stands for "S" in Yamae-Nishiki.
The rice is polished to the same degree as rice, so the flavor of the rice can be tasted directly.
Low-polishing means that the proteins and fats have not been completely removed.
I have the impression that this would result in a cloying taste and inhibit the aroma.
I did taste some bitterness in the latter half, but I am not sure about this.

It is a pure sake with 12% alcohol by volume.
It is made with Yamakei-nishiki. I read it as Yamakei-nishiki, but it is Sankei-nishiki.
The low alcohol content makes it light and fluffy, but it is sweet and umami.
I wonder if this kind of thing is the latest fad.

This was the first time I drank the Cho Uraku series.
It is 100% Dewanosato and made with Yamagata yeast.
It has a fruity taste and the second half is crisp.
The series is said to be searching for the next generation standard, and when told so, I think it could be a standard sake. 南十字輝7/10

The pineapple aroma is quite strong.

Bottle warmed and stored at low temperature.
It is a summer sake, so it is made to be drunk neat.
It is not very floral, but it is easy to drink and has a nice sharpness.
The low alcohol content makes it easy to drink.

Sake made from 80% polished Omachi rice from Okayama Prefecture.
The rice is grown under contract at Mame Farm, and it is said that the rice is polished low in order to directly express the flavor of the rice.
The sake has a nice, fluffy flavor.
It has a good sharpness and acidity.

I think it's kind of neat that they stopped using the toji system and branded their own sake as "Seishun for life".
You can feel the acidity while it slides smoothly down your throat.
It has a lingering bitterness, and I wonder if I'm reading too much into it when I say that it is tailored to remain in the mouth, giving it a sense of youthfulness. RecommendedContentsSectionView.title
