A very low-polishing sake with 91% polished rice.
The "S" stands for "S" in Yamae-Nishiki.
The rice is polished to the same degree as rice, so the flavor of the rice can be tasted directly.
Low-polishing means that the proteins and fats have not been completely removed.
I have the impression that this would result in a cloying taste and inhibit the aroma.
I did taste some bitterness in the latter half, but I am not sure about this.
Sake these days has a strong individuality, so it is difficult to taste it.
