Sake degree +21 I have never had such a dry sake, but it is light, dry, and very pleasant on the palate. I drank it up right away. If I see it again somewhere, I will get a bottle.

Slightly mellow + Slightly dry As is typical of nama-shu, it has a sweet mouthfeel at first. The dryness comes later. The bitterness can be felt at the end, but after swallowing, the bitterness does not remain and a mild flavor remains.

The word "forbidden" means "what not to do". This Junmai Daiginjo is one of the products polished to 11% rice polishing ratio. It took about 100 hours to polish the rice from brown to 25%, then about 120 hours to transfer it to a diamond milling machine, and a total of 9 days to reach 11% (quoted from the label). I bought it (5,500 yen) because it was not super expensive even though it was polished to this level. It has a very, very clear flavor. Not as good as Koryu, but it tastes like water (a compliment) and is slightly sweet. The aftertaste is a very drinkable sourness. Kudokyu-tei has nothing to offer. Next time, I will try "Kokuokushi" for the first time in a while. It is said that the more polished the rice is, the more it loses its rough taste, but I was curious to know what 22% polished rice really tastes like, so I bought it. The first sip was very refreshing. The taste changes to a melon-like flavor in the mouth, followed by a sourness that is unique to sake. It is moderately sweet and is one that you will never get tired of. There was only one bottle left in stock, so I would like to buy it again if it is available in stores. I would also like to complete the Kaze no Mori series. Junmai Daiginjo made from Toyobai rice polished to 39%. The rainbow label intrigued me and I bought it. At first, the taste is light sweet and refreshingly fruity, but by the time you finish it, it has a strange sensation of changing to a light slightly dry taste. It was so delicious that I could drink it in large gulps, so I had to be careful not to drink too much. LOL! Rice: Toyobai rice Rice polishing ratio: 39 Sake degree: -1.0 to +2.0 Acidity: 1.3 - 1.4

I happened to come across this bottle at a department store. I fell in love at first sight when I tasted it and bought it immediately. It is slightly sweet, fruity, and refreshing. The fact that it doesn't give you a twang after drinking is great!
