Attracted by the jellyfish label, I bought it at the brewery. It has a fresh, greenish, cucumber aroma. It has a sour citric acidity and a hint of sweetness, probably due to the use of white malted rice. But it is refreshing and has a good sharpness. It is the type of sake that even people who do not like sake even those who don't like sake. Junmai Ginjo Genshu Limited edition made from 58% polished "Akigeshiki" rice. Alcohol content 17-18%. Very dark, but the flavor softens and becomes easier to drink when heated. Sake for people who like to warm up 🍶.

Junmai-shu made with "Ginpu", Hokkaido's preferred rice for sake brewing, brewed with German white wine yeast. Slightly effervescent and juicy with sweetness and acidity. It goes well with Western cuisine.

Banana-like aroma. In the mouth, the same sweetness and umami as the aroma spreads, and the lingering umami is pleasant, making it a sake that you will want to pair with a meal. I had it at a sake brewery and enjoyed it so much that I bought it to drink at home. It is sad that the brewery has closed down now that I know such a delicious sake.

The aroma is faintly citrusy. When you put it in your mouth, you feel coolness. The spiciness goes down the throat as if it is being washed away and disappears as if it is trailing off when swallowed. Recommended as a food sake. This sake is made by the proprietresses of Awara Onsen in Fukui Prefecture, all of whom are certified sake connoisseurs. It is brewed on consignment by Kubota Sake Brewery, but it is not available at the brewery. You can only drink or buy sake at the hot springs where the proprietresses are located. The proprietresses themselves are responsible for rice planting, rice harvesting, and other aspects of sake rice cultivation, as well as the three-stage brewing and preparation process. There are dry and sweet varieties, and I bought a bottle of dry sake that was recommended at the inn as a good match for crab.

Purchased at Sakeya Otake in Central Park, which sells sake from the three Tokai prefectures. Junmai Daiginjo "Chitaburu" Kaoru Sake. 100% Yume-Ginko, Aichi Prefecture's preferred rice for sake brewing. The aroma is like that of pears and green apples, and when you take it to your mouth, its gorgeous fragrance spreads, making you want to drink more and more. It is recommended to drink it in a wine glass to enjoy the aroma. Be careful not to drink too much. This rare sake was made by a group of drinkers who support the continuation of Aichi's brewing culture and asked the toji (master brewer) to produce a limited number of 500 bottles. When poured over vanilla ice cream, it became a high-class dessert for adults that looks like it could be served at a restaurant.
