The aroma is faintly citrusy. When you put it in your mouth, you feel coolness. The spiciness goes down the throat as if it is being washed away and disappears as if it is trailing off when swallowed. Recommended as a food sake.
This sake is made by the proprietresses of Awara Onsen in Fukui Prefecture, all of whom are certified sake connoisseurs.
It is brewed on consignment by Kubota Sake Brewery, but it is not available at the brewery. You can only drink or buy sake at the hot springs where the proprietresses are located.
The proprietresses themselves are responsible for rice planting, rice harvesting, and other aspects of sake rice cultivation, as well as the three-stage brewing and preparation process.
There are dry and sweet varieties, and I bought a bottle of dry sake that was recommended at the inn as a good match for crab.
