Junmai Ginjo Unadjusted Raw Sake Aiyama x Omachi AIMACHI 2019 / Takachiyo Shuzo Co. Polishing ratio 59%, Aiyama 22.5%, Omachi 77.5%, Alcohol content 16%. The "59Takachiyo" series is characterized by a flat rice polishing ratio of 59% and a unified yeast, Kyokai Yeast 1801. The difference is the type of rice used. Aizan is a cross between Aifune 117 (Aichi Prefecture Mikawa Nishiki No. 4 x Funaki Omachi) and Yamao 67 (Yamada Nishiki x Omachi). It has a large heart white and is very rich in starch. It is not only sweet, but also has a strong acidity and an apple-like 🍎 taste. Freshly opened, the wine is slightly fizzy. When paired with truffles or other sweet chocolates, it has a slight brandy-like bitter aftertaste.

. Houhai Mohawk Musume Junmai Ginjo / Miura Shuzo (Aomori, Japan) . Junmai Ginjo, 55% polishing ratio, 15% alcohol content, Houhai rice. . I'm trying to brighten the table as much as I can under this corona! This is a limited edition of the popular brand "Houpai," which was released in limited quantities because of the desire to have a limited amount of this product. The flashy label with an eccentric mohawk girl catches the eye. This label was apparently created in collaboration with the MC, Mami Yamase, when a local designer (Mohawk style) appeared on the variety show "Shinnime-san iri" a few decades ago and a special program was organized. The mohawk girl's mohawk also means "another warmed up bottle". In the mouth, the rice flavor is gentle and swollen, but the finish is terribly sharp and crisp.

The Hatsuyukisou grape / Minenosetsu Brewery (Fukushima Prefecture) . □ Junmaishu, one-time fire, other brewed sake, 14% alcohol by volume, Sake degree +11%, R1BY . □Kake rice: Kitakata-grown Gotamangoku 60% polished  Koji rice:Aizu Chiyonishiki 60% polished . The third in the Hatsuyuki-so series is GRAPE. White grape juice is added in the preparation of sake, and the fermentation of sake and wine is done at the same time. The aroma of fresh, fruity grapes is the attack, but the taste is mildly sweet and has a refreshing acidity. It is a good combination of the flavor of Japanese sake and the lightness of white wine. Anyway, it is clean and clear in every respect.

Oysters and other seafood from the Seto Inland Sea. This sake was developed in response to the desire to create a sake that goes well with Western-style cuisine made from the sea. The image is of a lemon, a specialty of Hiroshima, squeezed tightly on an oyster. By using white koji, this sake has a sweet and sour taste with a fresh sourness like a lemon. Sweet but not sticky sweetness. The taste is similar to that of a yucara-momo.

. doburoku orange&coriander at Sangenjaya / WAKAZE (Tokyo) . □70% milling ratio, low alcohol. Refreshing doburoku made with orange peel and coriander. Sweet but sour and refreshing impression. It is thick and still retains the crunchy texture of the rice. By increasing the percentage of coriander, the spicy flavor is expressed.
