After "Aki-agari" comes "Hatsu Shibori Hatsushimi-shu Nama-shu", which I usually find the first release to be a bit on the edges (personal opinion), but this one has the privilege of being a first release, and the sake is alive and well. (The label says, "If you're going to do it with fish, do it with Hitakami. Anyway, Hidakami won the award for cute label design in 2025 🏆 (personal selection of the dry sake group).

KENKON ICHI. As a dry sake drinker, I always keep this sake on hand if it is available at the restaurant. Like a sommelier, enjoy it first on the tip of the tongue, then the nasal cavity, and after enjoying the whole thing, the depth in the throat. with grilled fugu. It's the best of both worlds.
