The aroma has a hint of alcohol and koji-derived nuances. The mouthfeel has a slight sense of maturity.
The mid-palate is dominated by umami and acidity, with a lingering aftertaste.
Overall, it is classic and somewhat robust.
Since the brewing year is R5, the sake was brewed before the end of June 2024 and stored for nearly a year in its raw state before being bottled.
This gives the impression of a mellowness and thickness.

The aroma is green apple. Taste is sourness, schwashiness and strawberry sweetness. Trolly texture too.
The alcohol content is as high as 17, so it feels powerful in the mouth.
When drunk on the rocks, the sourness stands out more than the sweetness.

It was great to hear such a spillover story! RyuI ordered a sake that had as much umami as Furoizumi at a store with a large selection of Japanese sake in Shiga.
It is lighter than Furoizumi, but it does have a lot of umami.
I now understand the greatness of Furoizumi.
