Last night I opened a bottle of Junmai Ginjo "Bizen Omachi", a limited edition sake from the Saijotsuru brewery, which I purchased on a visit to Saijotsuru in March. It went exquisitely with Carpaccio of sea bream 🍶.
This is the second of a set of three bottles of Saijotsuru that I received as a Furusato tax payment.
It has a slightly higher rice polishing ratio (65%) and a lower alcohol content (15%) than the first bottle (60%).
While the first bottle had a strong initial impact, this one did not, so I personally felt it was a bit lacking.
I bought this sake from a nearby liquor store in Hiroshima.
It's a nigorizake, slightly foamy, with a sweet muscat-like aftertaste, and it's delicious.
We bought it at the sake shop Yamada in Hiroshima station. It has a fruity-sweet aroma, a sour taste, and a strong rice taste, with a smooth aftertaste. It was so good that I want to buy it again for next New Year's.
