The, awesome balanced standard sake!
When drunk cold, it has a clean mouthfeel, but with the sweetness and stickiness typical of Junmai sake.
When served lukewarm, the stickiness disappears and the aroma and sweetness mellows out!
You can enjoy the different tastes of different sake at different temperatures.
The brewer, Saijotsuru Sake Brewery, recommended it for hot sake, but it is also delicious cold.
It was also great hot.
It's a better sake than the price.
It was a good sake today as well.

My brother in Hiroshima sent me a gift of conger eel and local sake 😊.
Saijotsuru super dry sake and special dried conger eel overnight. How could they not go well together? LOL!
The sake has no artificial flavors, is crisp and spicy, and has a mellow umami flavor. It is an orthodox dry sake, and you will never get tired of drinking it.
It is a good sake to drink during a meal, or even after a meal, and you will not get tired of drinking it slowly. The name "Saijo" is not a date 😁.

Last night I opened a bottle of Junmai Ginjo "Bizen Omachi", a limited edition sake from the Saijotsuru brewery, which I purchased on a visit to Saijotsuru in March. It went exquisitely with Carpaccio of sea bream 🍶.

This is the second of a set of three bottles of Saijotsuru that I received as a Furusato tax payment.
It has a slightly higher rice polishing ratio (65%) and a lower alcohol content (15%) than the first bottle (60%).
While the first bottle had a strong initial impact, this one did not, so I personally felt it was a bit lacking.

I bought this sake from a nearby liquor store in Hiroshima.
It's a nigorizake, slightly foamy, with a sweet muscat-like aftertaste, and it's delicious.

We bought it at the sake shop Yamada in Hiroshima station. It has a fruity-sweet aroma, a sour taste, and a strong rice taste, with a smooth aftertaste. It was so good that I want to buy it again for next New Year's.
