Today is Mother's Day, so we had hand-rolled sushi.
I don't like the feeling of a crisp, clean, albeit a bit dry, Junmai for Sashimi. I don't like the feeling of "I'm not a fan of that", so I went for the Dai-Sara Junmai right away!
The first sip gives a mild umami flavor typical of junmai, but as it goes down the throat, it finishes clean and crisp.
+If it goes up to +15, it seems too spicy, but this one seems to be +12. I think it is just right.
It went well with scallops, which are light and tasty among today's ingredients.

Momentarily punchy mouthfeel when included.
The alcohol feels crisp and spicy.
The acidity is refreshing, and the rice flavor has a core of moderate sweetness.
Fresh flavor at the end.
It has a good sharpness.
This restaurant is full of service.
At 130ml, the punch of alcohol comes through later.
It goes very well with a strong flavored meal.
Jimbocho Uokatsu
First impression: not really my favorite,
Maybe it was because the temperature was higher, or because I ate it with dashi broth, but it was okay! It's not my favorite.

I found Sazanami at a liquor store in the next town over after six years of not seeing it at the local liquor store.
It was calm, light, and gradually delicious.
It has been a long time, but the old impression comes back to me.
I am grateful for sake that can reset me from time to time.
I will drink it cold until the end.
