The rice used is Gohyakumangoku
Kanai Sake Brewery calls itself a "music brewery" and plays Mozart music to nurture koji mold.
This special junmai is an authentic junmai sake with a robust and full-bodied flavor.
It has a crisp finish and is the type of sake that you will never get tired of drinking.
Not bad.
With this, there are only two breweries left to conquer Kanagawa!

Where to buy】Shuagakudo
The accompaniment is motsu nabe.
The bottle was purchased as a souvenir from a trip to Hakone last year, and opened just now. The faceless label is unusual.
It has a high alcohol content, a slightly bitter taste, and a refreshing sharpness, but the umami is not quite there. It was a little easier to drink on the rocks with ice.

Today we were on a tour of breweries in Kanagawa.
We toured 6 breweries, but only 3 were open!
Seto Shuzo, Nakazawa Shuzo, and Kanai Shuzo.
I didn't buy at Nakazawa Shuzo this time because they sold out of the one I wanted to buy.
This one seems to have more acidity and umami.
The sweetness is slight.
The aftertaste is woody.
Compared to the previous two bottles
but it is a little less punchy than the previous two bottles.
After a short pause
I can feel the sweetness and umami of the rice very well.

I've never had a lot of sake from Kanagawa Prefecture, so this was a challenge.
It was new sake with an alcohol content of 18 degrees.
The alcohol is quite strong, and I felt like I was drinking 25 degrees.
While it was fresh, I felt like I would get drunk if I drank too much.
I'm wondering if it would have been better served cold or perhaps hot.
