Yeah, well, it's just plain delicious! Summer Sake. First visit to Suiba because I had to come to Kyoto. It's a little disappointing that they only have 3 kinds of sake, but... I'm going to school anyway, so I don't have to drink that much.

Jyushidai Honmaru Hiden Tamagase" @Standing drink 40,000 yen 1.8L Kakushin Honmaru, a representative sake of "Jyushidai," uses a special technique called Hiden Tamagase. Hiden Tamagase means that Jyushidai's junmai kasuri shochu is mixed with water to restore the original tama-shu, which is a mixture of sake and water. This method adds depth and richness to the sake. The secret tamagashi is a unique technique of the Takagi Sake Brewery, and cannot be imitated by other breweries. This technique is a secret, and the details of the method and proportions are not disclosed to the public. Among the Jyushi-Daijo brands, only "Honmaru" uses the secret tamagashi. The brewer of "Jyushidai Kakushin Honmaru Hiden Tamagase" is a long-established sake brewery in Yamagata Prefecture called Takagi Shuzo. Founded in the Genroku era (1688-1704) of the Edo period (1603-1868), the brewery is currently headed by Katsumi Takagi, the 14th generation of the family. All of Takagi Sake Brewery's sake is carefully made by hand. The rice used is Yamagata Prefecture's Gohyakumangoku, Dewa Sanzan, and other rice suitable for sake brewing, and the water is natural water pumped from a private well on the brewery's premises. Because it is made with such an emphasis on quality, the amount shipped is extremely small, and it is known as a difficult-to-find brand.
