DATE7 is a collaborative effort by 7 famous sake breweries in Miyagi. The main brands of each brewery are Katsuyama, Sumizue, Hakurakusei, Sanwa, Haginotsuru, Miyakanbaai and Koganezawa, all of which are nationally recognized brands of sake.
This is the sixth and sixth chapter of the Junmai Daiginjo with locally grown "Sasanishiki". The leader brewery and each process are rotated on a rotating basis. This year's leader is Kanba Shuzo (the city of Osaki is home to the "Osaki Kodo", which is registered as a World Agricultural Heritage Site). The brewery has honed its expertise in Daiginjo brewing and selected "Sasanishiki" to 29%.
