The nose has a slight grain and alkaloa aroma, and the palate has cotton candy and honey nuances. It has a somewhat classic impression, but the soft, smooth mouthfeel with sweet flavor and crisp, sharp acidity leaves a clean, refreshing aftertaste like a bite of a young apple.
It is a medium to slightly dry, light and umami type of sake.
The entrée was mentaiko (cod roe) and fluffy omelet, and the 🧄salted pork guts had an irresistible crunchy texture 😋.

The aroma is mildly fruity, with a pleasant microbubbly gaseous sensation like that of a pure sake, and a light nigori (light mist).
It has a lingering flavor with a little bit of koji sweetness, a little bit of alkali, and a little bit of saltiness. It went well with sashimi.
The next day, the alu feeling that had been bothering me was well adjusted and it became smooth and delicious.

The top aroma is sweet and mature with sourness, quince, bitter cocoa and fruity coffee, and umami spreads with a deep savory flavor like soy sauce mash. There is a slight saltiness, a lingering sweet and sour aftertaste like after eating dried fruits, and a lingering aroma like Shaoxing wine on the nose.... I can't wait to drink more as I explore the flavors.

I found an unfamiliar label mixed in with the local Tochigi sake at the supermarket.... I picked it up because it looked like there was some left over from the Kamikawa Taisetsu ⁉︎ Goryo or Tokachi ⁉︎ Hokkaido Fair 🤗.
The aroma is subdued, but sweet like a cherry drop if you include it. It has a malted rice aroma and a bitter aftertaste. I think I'll try the other half with warmed sake...
On the second day, I warmed it up to lukewarm and it tasted sweet and sour, another delicious taste 😚...but the bitterness remained. I want to be able to say "this is delicious!

Smooth on the palate. Fine-grained, light type of ori. Soft, fruity, gorgeous ginjo aroma. Elegant, with a slight white dumpling-like quality.
It's so sweet, I think I'm going to drink too much😋.
but... tomorrow is my annual physical checkup 😣.
I am glad that I am allowed to drink up to 1 gou of sake the day before.
