It is said to be a blend of Noto Hatsusakura Honjozo + Tengumai, which miraculously survived the Noto Peninsula earthquake.
Hoping for recovery... 😌.
The nose has a slight grain and alkaloa aroma, and the palate has cotton candy and honey nuances. It has a somewhat classic impression, but the soft, smooth mouthfeel with sweet flavor and crisp, sharp acidity leaves a clean, refreshing aftertaste like a bite of a young apple.
It is a medium to slightly dry, light and umami type of sake.
The entrée was mentaiko (cod roe) and fluffy omelet, and the 🧄salted pork guts had an irresistible crunchy texture 😋.
