Next stop: Kamotsuru.
Instead of the tasting zone right at the entrance, we went into the premier sake zone, which is a bit further back 😁.
There is a gold medal winning sake and a Junmai Daiginjo Hiroshima Nishiki.
The Gold Award-winning sake was unexpectedly expensive, so I got the Hiroshima Nishiki 😋.
You can pick up the flavor of the rice 🌾 and the delayed bitterness.
There is a refreshing acidity, although it is not clearly perceptible.
The more I drank, the more the umami of the rice🌾 stood out, and it was clean and dry.
This year, it was a collaboration with Chibo.

Saijo's sake festival is held in the whole town, so it's fun on a different scale 😁 There are a number of sake breweries and you can enjoy sake to your heart's content. Please make plans to go and visit 😌.

The milestone was a limited edition Kamotsuru sake 🍶 that I bought at the Saijo Sake Festival 😀.
This sake 🍶 was available for paid tasting, but I didn't have enough time so I didn't taste it and bought it outright 😄.
It is a sake 🍶.
When you open the bottle, a soft sweetness wafts through the air.
A light, mild sweetness 😌.
The sweetness is fluffy like cotton candy, but also supple, reminiscent of watermelon🍉 ☺️
And a little sourness behind the sweetness.
The mouthfeel is rounded, and the ginjo aroma is rich and fluffy on the nose🥰.
Day 2: ✌️
I felt the acidity got a little stronger, maybe it was more cohesive on day 1 🤔.
And it emptied just like that😅
This is the end of the Saijo section 🙏.
I hope to go back next year for the sake festival 😄.

I knew Kamotsuru originated from Association #5 yeast, but I didn't know it was brewed with it until I got home 😂.
This is my first sake with No.5 yeast 🍶.
Cold sake.
There is a gentle sweetness in the middle part of the sake.
Is this the unique taste of No.5 yeast? 🤔
It is easy to drink with a slightly light mid-palate.
You can feel the umami of rice well.

Saijo's sake festival is fascinating.
I went to Saijo the year before last and the year before that with a group of volunteers, and although it was not a sake festival, everyone was impressed. Saijo now has 7 breweries, and we call it "Dragon Ball Searching".  ヒロGood evening, Kosuke 🌙
