This may be the most shocking sake ever. Not an ordinary acidity, malic acid max! I wonder how it is made. There is a wine from Amalfi, Italy, that is very sour, but this is close to it. I heard that this is because Amalfi's specialty is lemon, and the local people are used to acidity. I wonder if it would be good to drink this wine while taking a bite of lemon to neutralize the acidity.

Postscript for the next day I thought for a day that maybe it was just the spices from the Thai food I had just before that made it sour, but that was not the case at all. The next day, the acidity is still scary. Is this really made from rice?

Aroma of cooked rice with melon fruit aroma. It is full of rice flavor, with some bitterness added to it, and the aftertaste is slightly dry and sharp. When I raised the temperature a little and drank it at room temperature, it became softer and better. It might be tasty warmed up. I wouldn't drink it warmed, though, because it's too hot.

Fruity aroma with a hint of banana or melon. While the aroma is fruity, the taste is surprisingly dry. At first glance, it seems unbalanced, but the clean quality of the wine makes it easy to enjoy. This is a good thing. It has been a week since it was opened, but as time goes on, the flavor will expand and become more balanced. It is at its best in its current state. The potential seems to be high.

Rich melon-like sweetness and acidity. But very nicely done, not too tart, and well balanced. This is amazing. This time, it was an extra. It was a dinner out for a gathering of relatives, and since my uncle was the sponsor, Sharaku, Nabeshima, and Houou Mita were all being served, but this was the last one the owner brought for us to try. This one was outstandingly delicious. I guess there are still some great sake brands that we don't know about yet. I will devote myself to it.

This surprised me. I thought it would be too sweet, but instead, it has a refreshing sweetness and fruity aroma, with almost no other unwanted flavors. To put it simply, it is the juice itself, squeezed from a Japanese pear. That may seem so, but there is a single strand of bitterness at the back of the juice. This bitterness keeps the sake well-balanced. I think this is a sake that should be appreciated more. No, I don't want it to be so highly regarded that I can no longer get it! Please pretend you didn't see this.

The aroma is mainly fruity, with hints of Japanese pear and melon, but the taste is sharp and dry. At first glance, it seems unbalanced, but it is a beautiful sake, so it is well balanced. A week has passed since the bottle was uncorked, and the aroma has not declined as much as expected, and the sharpness has been slightly toned down.
