Special junmai sake from Kotobuki Sake Brewery in Settsu-Tomida Township, Osaka, Japan's oldest and most prestigious sake brewing area.
Unlike Kuninonaga, this sake was dry and was served with sashimi, but it did not interfere with the taste of the food.
It was a good sake for a change of pace after a series of full-bodied and aromatic sakes.
Sashimi (tuna, salmon, sea bream, squid, shrimp), vinegared mackerel, pickled cucumber
It is not a strong statement, but it has a banana-like ginjo aroma with a hint of presence. The round taste drifts slowly through the mouth. You can feel the history, but there is also newness, which is good.
