昨日残ったものを、瓶の中の空気抜きをせずそのまま栓をして冷蔵庫保管で2日目。今日のは冷たい状態で米の旨味と丸みたっぷりのお味、昨日感じた後味の角張った粗っぽさは無し。 温度というよりは、一定時間空気に触れさせると本来の味が顔を出すお酒なんだと思う。時間が経つと美味しさを増すあたり、しっかりしたお酒の力強さ・逞しさが感じられるようで嬉しくなる。

栓の開けたては、米の旨味と丸みを感じたすぐ後に角張った粗っぽさがやってくる。間口の広いワイングラスに注いでしばらく空気に触れさせた後、グラスを手に持って少し温めてあげるとこの粗っぽさが取れ、お米の旨味と丸みが最後まで残る味になる。冷やしてよりは、常温〜温燗くらいの温度帯で美味しさを発揮するお酒だと思う。
