Hot!!! A spicy and slender food sake from the attack.
Even though it is a junmai daiginjo with a 50% rice polishing ratio, it is a food sake with little ginjo aroma.
This brand was recommended by a local who is from Gosho, who said that when he thinks of Gosho, he thinks of Kaze no Mori or Chiyo. I realized once again that Kaze no Mori is a sweet sake, while the locals drink a spicy food sake.
I love to drink it at home ♬ it is a gift from my friend from Nara 🙏.
I thought this kind of sake in 300ml bottles 😰 but it is easy to drink 😁 It tastes different from Kushira and Shinomine from the same brewery.

This is another brand of Chiyo Shuzo, which is famous for "Shinomine" and "Kushira". It's not on the official website either. I first heard about it when I saw it being heavily promoted at a local supermarket. Is it a local limited sake? Or is it a private brand? The rice used is 100% Nara Prefecture's sake brewing rice, "Roha Kaze".
The aroma is alcohol and lactic acid plus a strong muscat acidity.
On the palate, the soft acidity comes in slowly, and the umami spreads slowly from behind it. The sourness continues throughout the second half, and a faint bitterness also appears. There is a hint of sweetness. Basically, it is dry. The overall impression is clean and beautiful.
If I compare it to Ghibli, it is the theme song of "Princess Mononoke" sung by Yonera Miichi. It's like, "The beauty of a sharpened blade, its cutting edge resembles your profile. There is sharpness, but there is also tenderness in it, and it is beautiful.

Cold!
When I poured it into the glass, it had a slight yellowish tinge, so I thought it would smell like rice, but the aroma was that of clean sake.
It is so refreshing that you can feel the acidity on the palate.
You can feel the flavor of rice and it is crisp.
