I bought this sake as a souvenir for myself at the Mizuguchi Sake Brewery near Dogo Onsen in Matsuyama, Ehime Prefecture during my trip to Shikoku.
I tasted 3-4 different kinds of sake and bought 2 bottles of sake and 1 bottle of shochu made from sake lees of ginjo-shu 😅.
Room temperature (cold sake)
It has a fruity aroma, slightly dry in the mouth, and a mild taste with a full-bodied rice flavor 😄I tasted it at the brewery and decided to buy it 😋.
Cold Sake
The aroma is muted and the sake turns into a smooth, easy drinking sake. After a while in the mouth, it warms up and tastes like it did when drunk at room temperature 😋.

The land of Dogo in Iyo, which was called "Nikitatsu" in the distant Manyo period (710-784).
Mizuguchi Shuzo, which has been brewing sake "Nikitatsu" for more than 120 years, is also the brewer of Dogo Beer.

It is spicy and clear with a clear watery flavor.
It has little aroma and umami.

Today, we had a lot of souvenirs from Dogo Onsen. I saw the Bocchan train in action, and it was a really tasteful train that matched the retro Dogo Onsen Station 🚂.
I had it with jakoten (fish cake)!
When the bottle is opened and poured, it has a clear, pale, sweet aroma like a peach, though it is understated.
The mouthfeel is smooth and silky, but the sweetness and umami part of the flavor is slightly rich.
There is a slight sweet and bitter flavor, and you can feel the melt-in-your-mouth taste as if you were eating chocolate 🍫.
The sweetness fades out quickly, so it is surprisingly easy to drink.
It is in tune with the flavor of the jakoten, and the silky feeling helps the oil to flow away, so it is a perfect match!
The bitterness in the aftertaste is truly chocolate. I will enjoy it while thinking of the Taisho Romantic & Western scenery of Mansuiso.

It is sweet on the palate, followed by a piquant sensation that goes right through to the nose. I guess it is the sweetness of the 35% Yamadanishiki ratio. But it is good that it is not just sweet 😊🍶.
