Drinks at a work-related drinking party. I don't have any notes, and the photos are a bit of a mess, but I'll post some for the record 🍶. This is the last drink. The last one is one that I think I would like. It is "Okunokami Ki Junmai Nakadori Unadjusted Nama Shuzake" from Toshimaya Shuzo (Higashimurayama City, Tokyo). Higashimurayama City is famous as the hometown of the late Ken Shimura, and for us sake drinkers, it is 🦎. This sake is a mid-priced, unadjusted pure sake brewed with Hachitan-Nishiki from Hiroshima Prefecture, polished to 55% rice ratio. The aroma is unobtrusive, but good. The mouthfeel is smooth and fresh, with a hint of gas. It has a very refreshing rice sweetness and a beautifully voluptuous umami. From there, the refreshing acidity is accented by a subtle bitterness that finishes off the taste. It has a good sharpness and a short aftertaste. There is nothing special about it, but it is very tasty and does not linger. ☺️ A sake for everyday use 🍶. It was paired with a pork cutlet of ribeye with excellent meat quality and heat, and it was a good end to the day. Thank you for the meal 🍶.

Hi Pon-chan 😃 This is the kind of restaurant you can expect to find here after being told "sorry we don't have much sake today." ☺️ The pork cutlet was badass with the sweetness of the fat 🐖😊. I'm having trouble buying sake because I drink a lot at work and my fridge is empty 😌.

Drinks at a work-related drinking party. I don't have any notes, and the photos are a bit of a mess, but I'll post some for the record 🍶. It's a Takakashiki Junmai Junmai Nama-shu, unfiltered, Nakadori from Hosui Shuzo (Tokushima Prefecture) 🍶. After drinking Hachibei, I was in the mood for a more umami-driven sake, so I chose this sake as one of the more umami-driven sake in the store's fridge. The label was a little hard to read because there were only a few bottles left. The aroma is like a junmai sake, with a hint of sweetness and a rice cake-like aroma. The taste starts with a fresh and gentle sweetness, followed by the robust umami of the rice, and finishes with a soft acidity. You can feel a pillar of umami throughout, but it is not too overbearing. ☺️ I had the Firefly Squid Bean Curd for the first time at this restaurant 😳. The spicy flavor of the firefly squid was well balanced by the tenderness of the silken tofu, and it was very tasty! (I regret forgetting to take a picture 😌) The kakishiki was a perfect complement to the firefly squid hot bean paste, and it went together so well that I drank it all up in no time 😊🍶. I wanted to warm it up, but it was the last 1 gong so it didn't happen 😢. I definitely want to try heated sake next time I have the chance 🍶.

Hi Aladdin 😃 I just had this at a prefectural party and it was so delicious that it really sinks in 🍶☺️ It sure looks good with heated sake 😋 and nansuka! Firefly Squid Bean Sprouts with Bean Sprouts ‼️ is definitely a good drink 🤗.

Hi Gyve 😃. The restaurant also had some other dishes such as Niimasa Viridian and Tasake Hyakushikan, so it looked promising ☺️ You might be able to reproduce it if you make it with less silken tofu and less bean curd 🤔, without overcooking the firefly squid 🤔.

Drinks at a work-related drinking party. I don't have any notes, and the photos are a bit of a mess, but I'll post some for the record 🍶. Hachibei's Ise-Nishiki Junmai Namaizu. It is from Motosaka Sake Brewery (Mie Prefecture). This is probably the first time I've had Ise-Nishiki sake, so I thought it would be a good opportunity to order it. From this point on, the others were also attracted to sake, so we shared it in kataguchi & inokuchi form 🍶😊. Ise-Nishiki is an old sake rice that was selected from native varieties in Mie Prefecture in 1849 and started to spread in 1860. It seems to be the mother of Yamada-Nishiki. It disappeared for a time due to its tendency to fall down easily in long rods, but in 1991, Motosaka Sake Brewery revived its cultivation from seed hulls preserved in Mie Prefecture. Motosaka Sake Brewery has now expanded the cultivation of Ise-Nishiki to its own rice paddies, making it an iconic sake rice that expresses the local terroir. The aroma is understated, with a rice-like flavor that is typical of sake. The mouthfeel is smooth, with the sweetness of the rice and moderate acidity flowing through, while the umami is well perceived and finishes with a subtle complexity. It is perfect as a food sake and went well with carrot shiriririri and bitter gourd stir-fry. ☺️

I don't have any notes, and the photos are a bit messy, but I had a lot of drinks, so it would be a waste not to go through them, so I'll just post a few for the record 🍶. The first sake is Sakiyami Junmai Ginjo Naokumi-Arabashiri (Takamusume Shuzo/Gunma Prefecture). I was attracted by the spring-like color of the label and decided to make it a starter 🌸. The Okinawan restaurant we were taken to: 🏝️ The restaurant had a great lineup of awamori and delicious food: ☺️ I looked at the menu and found a good variety of sake 😳. However, the owner apologized and said, "A group of people drank a lot of sake the other day, so we don't have many bottles left today 😌". I went to the fridge and chose from the sake that was left. It had a moderately mature ginjo aroma. The palate is still slightly stimulated by the gaseous sensation that is typical of direct pumping, and from the clear sweetness and umami, the acidity spreads gently, and from the mid-palate onward, the clear bitterness takes effect and finishes off. The roughness of the first pressing can only be felt in the bitterness, and it is a good sake with a sense of transparency and refinement typical of Miyamanishiki sake 🍶.

Hi Kotori 😃 It was Japanese food with a focus on Okinawan cuisine, but there is no dish that doesn't go well with sake 🍶☺️ Indeed someone might have been here the day before 😁 Still, there was a good selection! I would recommend Sakiyami if you don't mind bitterness!
