アラジンDrinks at a work-related drinking party. I don't have any notes, and the photos are a bit of a mess, but I'll post some for the record 🍶. It's a Takakashiki Junmai Junmai Nama-shu, unfiltered, Nakadori from Hosui Shuzo (Tokushima Prefecture) 🍶. After drinking Hachibei, I was in the mood for a more umami-driven sake, so I chose this sake as one of the more umami-driven sake in the store's fridge. The label was a little hard to read because there were only a few bottles left. The aroma is like a junmai sake, with a hint of sweetness and a rice cake-like aroma. The taste starts with a fresh and gentle sweetness, followed by the robust umami of the rice, and finishes with a soft acidity. You can feel a pillar of umami throughout, but it is not too overbearing. ☺️ I had the Firefly Squid Bean Curd for the first time at this restaurant 😳. The spicy flavor of the firefly squid was well balanced by the tenderness of the silken tofu, and it was very tasty! (I regret forgetting to take a picture 😌) The kakishiki was a perfect complement to the firefly squid hot bean paste, and it went together so well that I drank it all up in no time 😊🍶. I wanted to warm it up, but it was the last 1 gong so it didn't happen 😢. I definitely want to try heated sake next time I have the chance 🍶.

アラジンHi Gyve 😃. The restaurant also had some other dishes such as Niimasa Viridian and Tasake Hyakushikan, so it looked promising ☺️ You might be able to reproduce it if you make it with less silken tofu and less bean curd 🤔, without overcooking the firefly squid 🤔.
