Hannegi Shibori Junmai Gohyakumangoku. This Junmai sake is brewed by Yoshidaya using a very labor-intensive method called "Hanegi Shibori," in which sake is squeezed using a giant 8-meter-long tree. The pressing is adjusted with exquisite force and, as a result, the sake is not fully squeezed, thereby successfully eliminating any unwanted flavors!

Kine-no-kawa Junmai Unfiltered Unrefined Unmixed Sake. Kine-no-kawa has been brewed in Isahaya, Nagasaki for more than 180 years, and is a rare sake that is only sold at "Sake-no-Hiratokoya" in Hirado. It has a creamy taste with a lactic acidity reminiscent of a sake yeast yeast yeast, and is full of umami!

Manrei Tokubetsu Junmai Super Dry Nakadori Unfiltered Unrefined Nama Sake. Next, we had Manrei from the neighboring Saga region for the first time. It is the first time for me to taste this sake. While the umami of the rice is well expressed, the sharpness of the aftertaste is no wonder it is called "super-harakuchi".

Hiran Nikkomaru, unrefined, unadulterated, unadulterated sake. First time in Nagasaki! We arrived without a reservation, but luckily we were able to get in at Fish Restaurant Asa, a branch of Asa, a famous restaurant in Nagasaki. The toast was Nikkomaru by Jiran! A perfect balance of fresh apple-like aroma, acidity, and complex flavor, it is truly a delicious and unintentionally smiling cup!
