Last 4 drinks at Yamashin, a sake bar in Echigo-Yuzawa Taizen Junmai Daiginjo Unfiltered Nama-shu, Bottle Warmed, Ichi Hi-ire I was talking with the master and asked him if he knew Mr. XX, a classmate of mine who used to work for a local brewery in Ojiya, "Chojamori" Niigata Meisho. I asked him. I know you, Mr. XX! And from there, the conversation got even more lively. He suggested that we have one more drink at the end of the meal, and we agreed. He suggested, and I agreed. Still, my personal impression of the restaurant is that it is a wonderful place. With a one-piece wooden counter and JAZZ as background music, you can enjoy Niigata sake in a relaxed atmosphere. The master's knowledge of sake is excellent. The master said that Tsururei Hiyayogoshi was more refreshing than usual, and I shared the same impression. Now, Taizen. I heard that this brand started in 2018 and is limited to 9 sake stores in the prefecture. Modern. Niigata Meibrewing, a local brewery in Ojiya, does not brew outstanding sake, but it is well-balanced and high quality. It is good to know that they can brew such a modern sake as well.

Good morning, Mr. Sashiu 😊. It has been a while since I was in Echigo-Yuzawa and I am glad to have found a good sake bar like Yamashin as well as Ponshukan in the station. I recommend it.

For my third drink, I requested something only available here, which was Shirataki in my hometown of Yuzawa (famous for Kozen Nyosui). It was a sake called Black Country, a test brew with unknown specs. I was not sure if they make this kind of sake, since I have a strong image of Kouzen Nyosui. I was surprised to learn that they make such a sake! I was surprised. This restaurant also serves excellent snacks. Herring pickled in sansho (Japanese pepper) and kanpachi (yellowtail).

Sake bar run by a sake shop called Yamashin in Echigo-Yuzawa, the second drink was a makihata. Takachiyo, the standard brand of Takachiyo's brewery. It is dry with just the right amount of umami. Master says it is safe to have in the fridge. He says it is also good heated. The master's forensic eye from a liquor store's point of view and his grasp of the quality of sake by actually drinking it is quite good. Right on the money ❗️

Tomoyuki Kumagai, good evening😊. It was a wonderful shop❗️ If you are in Echigo-Yuzawa, you can go to Yamashin for sake from Ponshukan, Nakanoya for hegi-Soba, and if you want to go to a hot spring ♨️, I think it is the best place👍

We decided to have another drink in Echigo-Yuzawa and went to a sake bar run by a liquor store. The lineup of sake on display outside the bar, including Uonuma and Chojamori, was right on the money. I decided to leave the first drink to them. Junmai Ginjo Hattanishiki from Koshijino Sesshokenbai. It is elegant, yet reserved, with a nice aftertaste. A perfect toast 👍.
