This is the first time I have heard of this brand. A quick search reveals that the brewery also produces Koshino-Kanchubai. It has been bottled for a while, so it does not have a fresh feeling. The aroma is melon-like and a bit heavy. Is it similar to Naraman? It is said to be dry, but I personally felt it was quite sweet, and the actual sugar content was 12.2%. The astringency remains a little.

Last 4 drinks at Yamashin, a sake bar in Echigo-Yuzawa Taizen Junmai Daiginjo Unfiltered Nama-shu, Bottle Warmed, Ichi Hi-ire I was talking with the master and asked him if he knew Mr. XX, a classmate of mine who used to work for a local brewery in Ojiya, "Chojamori" Niigata Meisho. I asked him. I know you, Mr. XX! And from there, the conversation got even more lively. He suggested that we have one more drink at the end of the meal, and we agreed. He suggested, and I agreed. Still, my personal impression of the restaurant is that it is a wonderful place. With a one-piece wooden counter and JAZZ as background music, you can enjoy Niigata sake in a relaxed atmosphere. The master's knowledge of sake is excellent. The master said that Tsururei Hiyayogoshi was more refreshing than usual, and I shared the same impression. Now, Taizen. I heard that this brand started in 2018 and is limited to 9 sake stores in the prefecture. Modern. Niigata Meibrewing, a local brewery in Ojiya, does not brew outstanding sake, but it is well-balanced and high quality. It is good to know that they can brew such a modern sake as well.

Good morning, Mr. Sashiu 😊. It has been a while since I was in Echigo-Yuzawa and I am glad to have found a good sake bar like Yamashin as well as Ponshukan in the station. I recommend it.
