I was talking with the master and asked him if he knew Mr. XX, a classmate of mine who used to work for a local brewery in Ojiya, "Chojamori" Niigata Meisho. I asked him.

Still, my personal impression of the restaurant is that it is a wonderful place.
With a one-piece wooden counter and JAZZ as background music, you can enjoy Niigata sake in a relaxed atmosphere.
The master's knowledge of sake is excellent.
The master said that Tsururei Hiyayogoshi was more refreshing than usual, and I shared the same impression.

I heard that this brand started in 2018 and is limited to 9 sake stores in the prefecture.
Modern.
Niigata Meibrewing, a local brewery in Ojiya, does not brew outstanding sake, but it is well-balanced and high quality.
It is good to know that they can brew such a modern sake as well.
