This is the third year I've bought this classic, and while I was disappointed that the second year I felt the taste had declined a bit, this year I felt it had returned to the deliciousness of the first year I drank it for the first time. It has a pear flavor, a sour taste, and a strong sake flavor.

When I told the store that I like fruity and gorgeous sake with a clean taste, they offered this sake as their recommendation. I bought a bottle for home and compared it to Eiko Fuji's Yami Naraku Akimizu, which has a mild sweetness and umami flavor.

It was a strong sweet and umami sake. As someone who likes to feel refreshed after drinking, I did not like it, but it was a very drinkable sake.

With a rice polishing ratio of 29%, I drank it thinking it was a clean sake, but was surprised by the umami and sake that I felt. Of course, it was beautiful, easy to drink, and delicious.

I have always been curious about the Wind Forest. I wondered if it was standard. I chose this brand. It is an easy-drinking sake with a beautiful, fine bubble gas, not much aroma, a fruity taste, but also a firm and spicy flavor. I felt it might be similar to Abe, which I like, so I would like to compare them. I was told that Kaze no Mori is a sake made with unusually hard water. There seem to be a variety of brands with different rice types and milling ratios, so I would like to try others.

The aroma is gorgeous. It has acidity and sweetness. Fruity but with a clean aftertaste, which I like. I personally liked it with dried mango!
