Junmai Ginjyo Tamitsu Omachi Unfiltered Nama 2024BY 100% Omachi from Okayama The sweetness and umami spread gradually and pleasantly, and the slight bitterness in the aftertaste is a nice touch. I like it very much.

Yeast No. 9 Hachitan-Nishiki from Hiroshima, Yamadanishiki from Tokushima Alcohol 18 Sake meter degree +15, Acidity 1.8 Toji Rie Toyomoto I thought I had picked up something that was not dry, but when I got home and drank it, I was so dry that I looked at the label and realized I had taken the wrong one. It has a light, refreshing mouthfeel with a long, lingering bitterness and astringency, which is typical of a sake with a Sake meter rating of +15. It seems to go well with salty food.

We had a drink at Ise Jingu Shrine and Okage Yokocho. Okagesama Shiboritate Nama-nama Sake Alcohol content: 18 Ingredients : Rice, rice malt (all rice is domestically produced), brewers' alcohol Rice polishing ratio:50 It tastes deliciously crisp and lychee-like, as is typical of nama-shu. It has a good acidity and a pleasant alcoholic taste. I personally like it very much. It tastes similar to the Watanabe Sake Brewery Hidahomare Sake Rice Growing Study Group. Okagedasama Junmai Ginjo Kaminoho Ingredients : Rice (domestic), Rice malt (domestic) Rice:100% Kami no Ho produced in Mie Prefecture Rice polishing ratio:50 Light taste, tastes like white wine, and has a moderate astringent aftertaste.

Unlike the Kayasha's Ginjo-shu, it has a slightly richer flavor, with a bitter taste at the end. I drank it at room temperature, but it is better warmed hot.

It starts with a fruity mouthfeel with a very strong scent of pineapple, then the carbonation spreads its fruity taste in the mouth. Finally, it finishes with a heavy full-bodied pungency. It tastes like champagne. Does a sake to be appreciated have to have such a vivid taste?

I found it in a supermarket in a shopping street near Todaiji Temple and picked it up. It was very tasty, with a rich rice sweetness that quickly turned into a sharp taste and tightened up nicely.
