The aroma is a pungent alcohol smell.
It's a honjozo (honjozo means "pure brew") 💦.
The sweetness and umami are not so strong on the palate
but the acidity and bitterness (or pungency) are felt more strongly.
Well, it's not a taste that can be served in large quantities, but we should be thankful that they brew sake in such a hot place like Okinawa...
