Finally 400 check-ins: ☺️ Crowdfunding sake🍶 for the "Sake Rice Growing and Tozawa Revitalization Project" in Tozawa district, Ueda City, Nagano Prefecture. This is an initiative to revitalize the community through "Sake Rice Growing x Neji Event". The fruity ginjo aroma is refreshingly clear and gentle, with a rich rice aroma and a slight hint of chili acidity. The mouth is stimulated by a lively gassy sensation🫧. The texture is smooth and very fresh, with a dark, beautifully fruity sweetness and a tron-like rice flavor that spreads out on the tongue. Along with the gasiness, the light acidity spreads out with a pleasantly stimulating chill, and flows down the back of the throat, finishing with a sharp finish. The lingering aftertaste is long, as is typical of nama sake, with a pleasantly bitter astringency on the tongue. The second day after opening the bottle. Gas bubbles in the gulp. The aroma is a fruity ginjo aroma with a mature rice aroma and a freshness enhanced by the chirichiri acidity. More active gasiness than on the first day. The overall impression on the palate is one of stronger hue and slightly more lingering bitterness. The aroma and flavor are more intense and clearly defined than on the first day, making it even more delicious! The rice was carefully brewed by the Okazaki Sake Brewery from rice that is filled with the thoughts of the people of Tozawa, and we enjoyed it with great care 🍶.
