This is the second edition of my personal support project at Joetsu Shuzo. This is a true Niigata Junmai Ginjo. I thought it might be too cold, and I tried it to see if it would warm up. When it was lukewarm, the flavor of the rice and the refreshing sensation were well balanced. But it's probably best when it's left out and the temperature rises slightly. But I'm always thinking about the identity or existence value of Niigata sake in this area of the specs, and it's not that it doesn't go well with food. It's not that it doesn't go well with the food, but the Honjozo is much more approachable, and also in terms of CP.

It's been a long time since we received an Echigobijin. It has a very round and full mouthfeel, and it cut off quickly afterwards.
It was drier than other Joetsu region sakes, but it was a gentle beauty at heart.
