Sanada Rokubun Sen Junmai Ginjo Hitogokochi 50-50 Unfiltered unpasteurized sake Nama-moto style. It's amazing. Shuwa shuwa, dry. The sharpness is outstanding. The flavor of the sake is also pleasant. You can enjoy it while eating. It is interesting to compare it with Yamazan.

⭐️⭐️⭐️⭐️ Shusen-do Hakuichi 720/ Junmai Ginjyo Unfiltered Unrefined Nama-Hashigashi-zukuri 16%. Hitogochi from Yaebaru, Tomi-city, Nagano 55% 2024.08 As I am addicted to Yamazan, I wanted to try Sanada Rokubun Sen, which has a good reputation on the net, so I popped it on the net ☺️ (I couldn't find any Yamazan dealers in the neighborhood, even though I inquired about it). It has a more lactic acidity than Yamasan, and when it is cooled down, it has a delicious bitterness. However, I think I prefer Yamasan. If Yamazan is a clean drink, Rokubun Sen seems to roll around in a moist environment. ☺️

Sanada Rokubun Sen Hatsujin 720ml Sake rice: Hitogokochi produced in Yaebaru Polishing ratio 60 Alcohol content 16%. We purchased this Yamazan Shuzo at Miyajima-san. There were three varieties lined up, so I asked about their characteristics. I was told that the first one is mellow, and the rest become clearer and clearer. I decided to try this one first! I decided to go with this one first. Well, let's open the bottle! The first attack is acidic, but as you drink it, it is well-balanced, mellow, and delicious. Before I knew it, I had almost finished the entire bottle. I hope to get the other two during the Nagano EC free shipping campaign 😆.

Hitokokochi. It used to be available at souvenir shops in Ueda. It is modern with a mild fizzy taste. The sharpness has a somewhat retro feel to it. It is a high level of quality that you would not expect from the first batch.

U U U Slightly effervescent. Sweet aroma. Umami, bitterness. Refreshing and crisp. It has a nice sharpness, so it goes well with oily food. Yamazan Shuzo was featured in the news, and I was curious about it. Yamazan Sake Brewery had been out of brewing for several years, but a person from a different industry came in to manage the company, and this is the first lot of the restarted brewery. For now, they are restarting with only 3 types (this one + 2 "Yamazan" types) in 4-pack bottles only. The drama and the passionate sales talk by the liquor store owner added to the deliciousness of the sake. Expect more in the future. Postscript A few days after opening the bottle, a banana aroma was detected.
