Otaru Haruka Spring Limited Edition Sake
Junmai Ginjo.
The aroma has just the right attack and rounded spread on the palate, followed by a bit of spiciness and an aftertaste that is not too harsh nor too refreshing.

It's Tanaka Shuzo from Otaru City in Hokkaido, Japan, and if you think the label is unfamiliar, it's 、、、、 Eisen, a sake that has been revived after almost half a century.
It's a Junmai Ginjo with a masculine profile and umami flavor that is refreshingly dry.
It's easy to pair with a variety of foods as a gourmet sake.
Sakaeizumi was produced by Rishiri Shuzo (1932-73), which was the only sake brewery on Rishiri Island. The brand was popular because it used "Amaurosensui," spring water from Rishiri Fuji Town, which was selected as one of the 100 best waters in Japan. This time, Supres (Sapporo), a company that supports the management of hometown taxation, has revived Eizumi by commissioning Tanaka Shuzo to produce it.

This is another sake from Otaru Tanaka Shuzo, following the Takaragawa we drank yesterday. It's still very clear and light. It seems to be similar to the Kokushi Muso sake from Takasago Shuzo.
