Yamada-Nishiki, 35% polished rice. We had it at a tavern in Iwaki city! It is a delicious sake with a good mouthfeel, fruity aroma, slightly sweet taste, and a crazy good balance.
It is a dry, refreshing, and light junmai sake. I drank it cold, but the light flavor left something to be desired, so it would probably be more enjoyable hot.
