一番寒い時期に仕込んで、低温長期発酵。
甘いんだけど、舌の裏側から味覚がくる。

香りは柔らかく香る程度で程よく、飲みやすく軽い口当たり。辛口と言っても、あと味のすっきりさでああ辛口寄りなんだと気づく程度です。
ひやで頂きましたが、熱燗も良さそうだと分かります。良い意味で癖がないこのお酒は、刺身でも煮物でも和食ならなんでも合いそうでした。
