Kikkoma Sake Brewery, Gotohomachi, Aomori Prefecture (Junmai-Shu Old Style)
This sake has a mellow richness and flavor typical of junmai-shu, and a gentle ginjo aroma. I would like to try it at different temperatures to see how it tastes.
I had to restrain myself because of the vaccination, but I thought it was about time, so I went to the liquor store in the hot sun. I selected a bottle of Tobiraizumi Natsuzake, but I was wondering what to do with the other one, so I asked the shop assistant to introduce it to me. I asked for a well-balanced sake for the meal and decided on this one. Surprisingly, I don't think I've ever had an Aomori sake before.
The label is timeless. The brand name is straightforward and straightforward. That's how confident I felt.
Let's try it. The first thing I felt was sweetness. After that, a faint spiciness comes, and the unique flavor of sake spreads. There is no acidity. It is certainly a well-balanced gem. It doesn't interfere with any of the accompaniments, but it is wonderful to feel that it accompanies them. If you just go through the old sake, it may be hard for people to accept it now. It's a taste that doesn't break with the past, but utilizes it in a modern way.
If you are a beginner, you may be put off by the sake, but if you are a little more experienced, you may enjoy it. As I mentioned above, you can choose any accompaniment. If you find this at an izakaya, I'd like to order it. It's just right. Some people may find it too sweet for a sake to drink while eating.
Junmai Ginjo Kitan
The last day of our trip to Tohoku and Hokkaido.
It is quite heavy and suitable for 😵 warming sake, but not so easy to drink as a snack.

I've drunk a lot of Aomori's local sake, but this is my first Kikkoma.
According to the brewer, 98% of the production is consumed in Aomori Prefecture, and 80% is consumed within 20 km of the brewery.
It seems that local people have been drinking this sake for a long time, and it gives the impression of being a typical sake.
Please enjoy it with mountain vegetables! I thought it would be a good match, so I bought some grated mackerel.
The pickled yam with iburi-gakko and the pickled baby squirrel with wasabi are also good!

There is a slight bruise. It has moderate aroma and beautiful taste. Strong dishes such as canned Hachinohe mackerel with oil and fried chicken skin
The side dishes of the set meal seemed to go too well with alcohol, so I ordered some sake. We had some time before the bullet train, so we decided to go with it.
It's a soft sake. It's perfect for afternoon drinking.
