I liked Kappas, so I bought this one from the same brewery. It's a little dry, but a little mellower than Kappas.
Most of the bubbles are sweet, but I like the dry taste with meals.

I was introduced to a dry sake at the Hasegawa Sake Shop in Tokyo Station, and the shopkeeper recommended it to me, so I bought it.
It's called Kakusho, and it's a sake from Yamagata that I've never heard of.
It has a crisp, clean, sweet taste like a daiginjo. There is some alcohol in the taste and aroma.
After the sourness of Yamahai, the crisp and quite spicy taste lingers. The refreshing sweetness of the Daiginjo and the symmetrical dry spiciness are quite interesting and mysterious.
Normally, I wouldn't choose this one, but sometimes it's fun to have a new encounter with a recommendation.
