Michelin-starred Sushi Matsumoto in Itabashi, the sixth and last 🍶. It's been a long time since I've been to Loman. I used to love drinking it when I first started drinking sake. I remember Romain as a very sweet sake made from mochi rice with a four-step brewing process, but this one is quite good with a restrained sweetness 😆.

Michelin-starred restaurant in Itabashi, 5th in Sushi Matsumoto 🍶. This is my first time to see Aizan on a pack tag. The explanation on the back label says Aizan was popularized by Takagi Sake Brewery. I didn't know that.... Sake Mirai is a sake rice developed by Takagi Shuzo, so Takagi Shuzo is really great. This one is the best of the day with the Yoshida Brewery. It is just barely sweet enough not to interfere with the meal. It has a very good balance of various elements such as sweetness and acidity. I like all of the sake brands, but I think this one is the best.

Michelin-starred restaurant in Itabashi, 4th 🍶 at Sushi Matsumoto. Isobojiman is a famous sake brewery in Shizuoka. It is no exaggeration to say that today's Niimasa is possible thanks to Isobojiman. I like how they use Tojo's Yamada Nishiki but don't show it off at all. ❓️ Every brewery writes "Tojo Yamada Nishiki" on their website! It seems to be a bit sweet for Isobojiman. And if they didn't say it was a honjozo, I wouldn't know it was an aruze.

Michelin-starred restaurant in Itabashi, 3rd 🍶 at Sushi Matsumoto. Yoshidagurau, another brand of Tedorigawa, is a light, slightly effervescent sake. The alcohol content is 9 degrees Celsius. I thought it was low, but I didn't expect it to be this low. I was surprised to see the back label. It may not be a good way to describe it, but it looks like Shinmasa. This is delicious. It might be the best today. I was torn between this and Kafuda, although they are different types. I don't have to decide the number one.

Michelin-starred restaurant in Itabashi, second in Sushi Matsumoto 🍶. Kangiku's OCEAN99 series. Whenever I drink Kangiku, I always wish it had a little more acidity. It's just my taste...^^; I think this type of sake would be better with more acidity. It is just my taste.

Michelin-starred restaurant in Itabashi, 1st 🍶 at Sushi Matsumoto. Green Naturals I've been wanting to try. The ultimate naturals❓️ low alcohol, 10 degrees in the original. Sour water❓️ not bad, but subtle as sake...^^;
