Two bottles purchased at Kumazawa Sake Brewery in Chigasaki, which I visited last week, are all Chigasaki sake, brewed with Chigasaki's Gohyakumangoku, water from Kumazawa's well, and yeast collected in an air-raid shelter ๐ at Sandesi.
We had it with kombujime sashimi from Kanemitsu Toyama, which we received as part of our mid-year gift โจ.
Now, as for the sake, the aroma is fresh with a hint of green apple, and the mouthfeel is smooth with a firm umami as it is, and a crisp acidity.
The sake is smooth and smooth to drink, with a crisp acidity and a strong umami flavor.
