This is the first Sogapère Ephis I have tasted. It is a collection of 6 yeasts from No. 1 to No. 6, and I think I should really drink it after drinking each one, but this was the first one I encountered at the liquor store. It had a reputation for being "weird..." but it was a very smooth, lukewarm, and gentle sipping sake with a rich yeast aroma and plenty of sweetness, acidity, and umami in moderation! I would like to have it again if I can find it!

Shinbutsu Shuzo sake" by Yoshimura Shuzo in Uda City, Nara Prefecture. This sake is made from "Tsuyu Hakaze" (dewy leaves) harvested in Nara, using the Yamakami yeast from the Ogami Shrine, according to the method described in an old document from Kofukuji Temple. The sake is aged for one year at 97% polishing before shipping. This is the first time I visited this sake brewery. Thank you very much, Mr. Yoshimura. Please continue to play a lot and make wonderful sake.

Today I drank it with water and warmed sake, following the example of Mr. Hiroshi Uehara. It slowly sank in and became soft and pleasant to drink. It is a good sake with the punch and strength that only fully fermented and unpasteurized sake can have.

This is the first time I've tasted such a robust flavor in a dobu! It's not so much dobu as it is pure rice sake that has not been squeezed. It goes well with rice. It is a delicious sake!

What a luxurious 9 year aged Junmai sake...yum! Too good! It is delicious on its own with its matured umami and aroma. It is even better with water, but the umami and aroma are still there. It is even better with soda! Of course, heated sake with water is the best! It is a great sake to go with hearty side dishes 🍶.

The flamboyant Kaze no Mori! I was strangely convinced that this is a future-proof sake... and yet it is a bottle of Kaze no Mori that is both gorgeous, refreshing, and umami, with a sense of its own character and sagacity. I'm glad I bought it!
