The label is based on a subdued yellow color with the image of wood and vats, and is designed with a motif of a wooden hoop. This is the first bottle of Shichibonjari brewed in a wooden vat. It has a clean, dry taste with a slight greenish aftertaste, which is a hint of cedar. The freshness is due to the fact that it is a pure sake? Delicious! I prefer umami to overly dry sake, but this one has a balance of clean and light sweetness that I like. I want to cherish the spirit of "seizen keigo".

Compare with Takasago (Junmai Daiginjo). The first sip gave the impression of "round, smooth and sweet with a silky feel on the tongue. It is dry, but it is light nigori and the Junmai Daiginjo we are comparing it with makes it seem sweeter. There is a slight bubbling in the aftertaste. It gives a refreshing impression. Located at the foot of Mt. Zao and blessed with rich nature, the family's founder Juro Saemon took the name Onumaya and started brewing sake in the 2nd year of Shotoku era (Shotoku 2). Since then, we have been brewing high quality sake by hand, using the traditional cold brewing techniques, from koji molding to all the process of making sake.

Still in the New Year's mood for a good sake. The label with the subtitle "Matsukizuru" (pine-eating crane) is a good omen ✨. The sake has a soft mouthfeel with a good balance of acidity and sweetness. The aftertaste is clean and refreshing. Polishing ratio 45%, 100% Yamadanishiki

Hakkaisan is a sake that can be found at many izakaya (Japanese-style pubs). This is a sake tasting produced by Hakkai Brewery's "Kowa Brewery," where only a limited number of brewers are involved in the brewing of top-quality sake. The first sip was fruity and sweet. But the aftertaste was sharp and somehow reminiscent of Hakkaisan. This year's image was "to express the refreshing sweet and sour taste of biting into a plum and the lingering astringent aftertaste," according to the brewery. *Junmai Daiginjo, 100% Yamadanishiki

On a weekday evening when I had some free time, I stopped by and tried a sake that I had never tried before. It's a bit pricey at 1,000 yen a glass, but I wanted to see how I would feel if I had a good sake when I wasn't drunk...! The gold label gives it a luxurious look. When you take a sip, the aroma spreads and it feels very sweet. I wonder if this is a characteristic of daiginjos...it feels fruity. I was beginning to think that my own taste was Junmai? I was beginning to think that my own taste was Junmai, so I guess I was not ready for something this gorgeous yet. Next time, I would like to order two cups at the same time to compare the different tastes. Attracted by the cute packaging, I bought it for a friend's house. It tastes refreshing and easy to drink, with a slight carbonation derived from fermentation. My friend who usually drinks wine also highly praised the taste. and highly evaluated. Perfect for early summer. Excerpt from the website Odayaka Summer Junmai Ginjo (Nakakumi bottle-fired) Odayaka Junmai Ginjyo Nakakumi is bottled and fire-brewed with the same burst of freshness as the original. This junmai ginjo-shu has a juicy flavor with a firm umami and acidity unique to chukumi. We recommend drinking it crisp and chilled. Please enjoy its cool, refreshing aroma and excellent sharpness.
