Heterodox Gyojo Kabushiki Kaisha" is an innovative acidic sake created as the top compatible of "Flax Cat". Due to the citric acid derived from white malted rice, the acidity reaches about three times the normal level. The rice used is "Sake-komachi" grown without agricultural chemicals. It is brewed without the addition of yeast and fermented in a new vat made from cedar that is more than 100 years old. It is then aged in Japanese oak barrels, resulting in a bottle that is both fresh and has the potential for long-term aging. The 2022 vintage is expected to evolve even further through long-term aging.

Viridian" was born in the extremely difficult year of 2023, yet it is full of thickness and depth. The 2024 vintage will be unveiled tomorrow, after first quietly putting this sake, which has the potential for further aging, into a three-year sleep. The first impression may be of a freshness suited for early drinking. However, the sake rice used is Misato Nishiki, Akita's pride and joy in premium sake rice. To maximize its potential, the rice was polished to a flat polished ratio of 50%. Viridian" is the thickest and most powerful of the Colors series, with a long, lingering finish. In recent years, the majority of the vineyards have been converted to pesticide-free cultivation, which has further improved the quality of the wine. The full, rich flavor can be enjoyed immediately after pressing, but it also has the potential to age for a long time, rivaling Ash Earth.

Tenkaeru Clear Dry is a special bottle of clarified, fire-fermented, second fermentation in the bottle that is distinct from the regular version of Tenkaeru (unheated nigori sake). Since there is no nigori and the yeast has been removed, the gas pressure is stable and the flavor changes are reduced by heat sterilization. While regular Amanagashi is recommended for early consumption because the yeast is still alive and the internal pressure can easily rise, "Clear" and "Clear Dry" are suitable for long-term aging. In particular, due to its high durability, "Clear Dry" can be further evolved by spending more time growing at low temperatures. 24 PAN-02 This lot is the last of the first half of the brewing period. We have found a direction in the way we are handling the rice this season. Finally, we have a glimpse of the "ideal form of Flax Cat's brewing" that we have been pursuing for several years. The brewing of this season is now in full swing. Flaxcat is our favorite work in our private lab. I am impressed by Shinsei, which is always not satisfied with the status quo and moves forward even further.

MIST MIST is a non-foaming, nigori sake. In other words, MIST is not second fermented. The oli contains yeast, so it is subtly active and faintly slightly effervescent.
