National Sake Fair 2025 in Osaka ㊼
Tokyo booth ⑤.
Ozawa Sake Brewery is located in Hachioji City. It is a relative of Ozawa Brewery of Sawanoi in Ome City, and they are now partially outsourcing brewing.
◉ Kuwanoto Ginjo
This is an easy-drinking, quirky sake with a slight sweetness and a firm kick. I thought it was fairly inexpensive.
According to bouken's information, this sake also seems to have been brewed by Ozawa Shuzo on consignment.
Although not related to Kuwanoto, it seems that at one time there were no more breweries making sake in Hachioji, so the owner of Maihime in Suwa, Nagano Prefecture, was given a new sake production license and started the Tokyo Hachioji Brewery. The brewery is headed by Maihime's toji.

Ozawa Sake Brewery in Hachioji City.
Registered in Sakewa under Kuwanotsu, but correctly Kuwanotsu.
I wonder if they are related to Sawanoi's Ozawa Brewery.
They seem to consign sake to the brewery.
I've only seen sake in miniature sized straw barrels at Bic Camera.
Polishing ratio 55% Akita Sake Komachi? 15% Sake degree +4 or higher
Acidity 1.2, 1474 yen
It has a blue bottle, so is it a summer sake?
Ginjo aroma with a hint of rummy. It is a sharp dry sake with a hint of sweetness.
It seems that each sake is consigned to several breweries, but this one seems to be made by Ozawa Sake Brewery of Sawanoi.
Where should we go next? I was wondering where to go next when Mr. Ikoma showed up and told me that the president of Echizen Cape wanted to see who was making the sake 😁.
At this point, 1 hour and 40 minutes had passed...

There are so many different kinds of sake, but it's not good to drink the one that suits you best.
I always tell myself that before the event starts, but when I see a bottle in front of me, I can't control my desire!
It is very light but has a strong savory flavor!
It looks so good when heated!
The brewery is located in Hachioji City, which used to be famous for sericulture!

The aroma is modest, but it smells somewhere between umami and fruity.
The taste is moderate in terms of sugar content, but each parameter is well balanced and tastes good on its own. It has a beautiful impression with little bitterness.
The degree of addition of alcohol is appropriate. This is the type of wine that is quite useful in the latter half of the drinking season.
You may like it.

Tokyo's sake, Kuwa no Miyako. The blue color of the bottle and label is fresh and beautiful. The aroma is clean and discreetly rummy. When you put it in your mouth, you can feel the saltiness for a moment...well, it is just an impression. There is no such thing as saltiness. I wonder if it is what is called a dry, refreshing sake. It is easy to drink, with a clean and uncluttered taste.
